antipasto leftover bread salad

If you are like me, and maybe have some leftover bread that you might need a use for, here is an idea: bread salad!

So there are loads of recipes for panzanellas out there and I didn’t exactly have the ingredients for any of them. However, the idea seemed to be take some old bread, some tomatoes, some olive oil, a yummy acid, and some herbs and other nice stuff and toss it in a bowl and let it rest for a while so the bread absorbed some of the dressing and everything got yummy.

Here is what I did. I tore up my bread into big chunks, kinda the size I wished croutons would be. I chopped up some cherry tomatoes, parsley, and a bit of fennel from my veg box. I added some spicy mixed olives and peppers I had with some of the spice oil. I made a quick balsamic and olive oil vinaigrette and poured that over the whole thing. I let that sit until I was hungry.

When I was ready to eat, I poured the whole mess over some purslane from my veg box, but any salad greens would do. I topped it with some cubed avocado from my veg box, but nuts or non-dairy/dairy cheese would also be nice.
