
I had some fabulous pakchoi/bokchoy in my veg box, and it turns out that it is super great in a sandwich! If you sauté it with a little soy sauce, garlic, ginger, and peanut oil and some tofu (I had some deep fried tofu they sell at the Asian grocery near me), it is amazing! Some shredded carrots (or put through the spiralizer) and some spicy mayo and you’ve got yourself a winner!
