
My veg box this week had all the glorious greens! How lucky am I?!? So I made a quick and seriously yummy dinner of noodles, pakchoi/bokchoy, and vegan mince. Here’s how!
In a big pan add a slosh of oil. When hot add some garlic and ginger paste (or chopped garlic and ginger, or add garlic and ginger powder to the mince) and stir around, then add mince of your choice (I used vegan mince, but use what you have). Then add whatever chopped greens you have. I used my pakchoi/bokchoy, My vegan mince dries up pretty quick, so I had to add some water to the pan periodically to keep things a bit wet as everything cooked. When things looked mostly done, add the cooked noodles of your choice. I had some ready to go udon noodles, but rice noodles or even cooked spaghetti noodles would be fine. In a big bowl, mix 3 tablespoons of soy sauce, 2 teaspoons of sesame oil, 1 teaspoon of chili oil, 1 teaspoon of vinegar, and a pinch of sugar. Toss everything from frying pan into the big bowl and mix. Done!
