
I’ve had a butternut squash kicking around from a veg box past, and some veg box tomatoes that needed to be used, so I decided to make this curry because I love it. It makes a ton, and it is amazing. The original recipe calls for pumpkin, the link I’ve post uses slices of acorn squash, but I’ve used peeled cubes of butternut squash and it is great.
