plague pitas

Well, the UK is on lockdown and I’m so grateful to my extraordinary veg box people who have stepped up and delivered amazing food to the doorsteps of so so so many in my community without missing a beat. Cambridge Organic Food Company, you guys are the best!

I made pita yesterday and filled them with gorgeous tomatoes and lettuce, as well as some sautéed courgette/zucchini (all from my veg box) in a little oil and spices. The nice thing about courgette/zucchini is it soaks up a lot of flavours, so I added some garlic powder, Turkish Isot (a dried fermented pepper, but any pepper flakes will do), salt and lemon juice. I wiped the excess spiced oil in the pan off with my pitas, so they would also have some added flavour. Top the pitas with the veg and a little vegan or regular mayo if you want. Done!
