
I received a giant purple cabbage in my veg box which is a big adventure for me. I do like cabbage and I suspect it has some great nutritional value, but I won’t lie, this is a big cabbage. So, friends, here we go, meal one with my giant cabbage.
Accompanying my protein is some pretty tasty sautéed purple cabbage. Turns out, if you slice it thinly, it cooks up in about 10-15 mins sautéed in a little oil and caraway seeds and salt. Also, it really shines if you finish it with a splash of lemon, parsley (dill would also work), and a couple of tablespoons of whatever non-dairy or dairy sour cream or yogurt you have kicking around (i.e., when it is done cooking, add these things in and stir). It has some good crunch and is really satisfying!
