oodles of noodles

I’m guessing from my veg box company’s Facebook post, that some more people in my area are now having veg box adventures too!

I had some pakchoi/bokchoy in my box which I love because it gets silky soft when it is cooked. I decided to have it with some smoked tofu and noodles. This is easy and fast and yummy. You can use whatever protein you want (minced whatever you have kicking around or firm tofu). I like smoked tofu because I like the flavour and it is ready to eat, but minced whatever is also fine.

In terms of sauce and spices, I used a tablespoon or two of canola/rapeseed oil to fry the greens and protein, and a teaspoon of two of sesame oil, a couple tablespoons of soy sauce, some chinese vinegar for acid (if you have it), and some chillies in oil or chilli flakes for heat (I used Korean chilli powder).

I heated the oil in a pan with the Korean chilli powder, sautéed my greens until they looked wilted and lovely. If you’re using some minced protein, I’d sauté that before the greens and maybe with some onion and garlic, then add the greens. Then I added some chopped tofu and packaged rice noodles (the already mostly cooked kind of noodles, but you can cook up some rice noodles or even use spaghetti in a pinch) and mixed it around for a few minutes. If it looked too dry, I added a splash of water. I took the whole pan off the heat, added the sesame oil, soy sauce, and vinegar, and stirred it all up. Dumped it in a bowl and topped with sesame seeds. Done!
