
So, I made a ton of bolognese sauce and I decided to make a tiny lasagna but sadly I didn’t have noodles. However, I did have potatoes from my veg box, so I decided to make potato lasagna. It was surprisingly good. Here is what I did.
Preheat the oven to 180C/350F.
I made a white sauce by melting a heaping tablespoon of nondairy butter (you can use regular butter) in a pot and adding an heaping tablespoon of flour and whisking it around for a few minutes until it cooked. Then I slowly added some oat milk (but you can use any milk you like) and whisked until I achieve a nice sauce that wasn’t too thick. I added a bit of garlic powder and nutritional yeast for some zip.
I used my mandolin to slice two potatoes into thin slices to use as noodles. You could use noodles, I just didn’t have any. Put a layer of white sauce on the bottom of your pan, then a layer of potatoes of noodles, then a layer of non-dairy or dairy cheese, then a layer of bolognese, then a layer of white sauce, then a layer of potatoes/noodles, then cheese, then bolognese, then white sauce, etc. Bake for about 40 mins.
