
My veg box had some gorgeous mushrooms, potatoes, and onions which made me think mushroom soup might be nice!
You’ll need a lot of sliced mushrooms (maybe 200g), an diced onion, a chopped potato, some olive oil, a couple of stock cubes, the dairy you like (I used oat milk, some nutritional yeast, lemon juice, and the herbs you like with mushrooms (I used thyme and chives, but tarragon would also be nice), a big pot and a smaller pot.
Put some oil in the big pot and sauté the onions until soft. Add the mushrooms in batches and sauté until brown. Add about half a litre or so of water with a stock cube (I used mushroom stock) and let boil for a bit.
In the smaller pan, add the chopped potato, the other stock cube, and just enough water to cover and cook until tender.
Add the potatoes and their cooking water to a blender, add 2-3 tablespoons of nutritional yeast, about 200 ml of the dairy of your choice, and the lemon juice and blend until smooth. Add a couple of ladles of the mushroom mix and pulse a couple of times. Pour the potato/mushroom mixture into the big pot of mushroom soup. Add herbs and season to taste.
