
Lettuce and tomatoes are more than just good sandwiches fillers. My veg box has awesome lettuce and tomatoes that really shine on their own, and make for a quick packed lunch that comes together in about 5 mins. I chopped them up and added them to a ready-made grains package (wheat berries, red rice, freekeh, black barley, white quinoa) I heated for 45 seconds in the microwave then mixed with a dressing made from a couple of heaping tablespoons of tahini, a splash of boiling water from the kettle, garlic powder, hot pepper flakes, and lemon juice. Any hardy ready-made grains will do!
