about thyme beer bread

Well, this isn’t exactly from my veg box, but it is great fast beer bread. I added fresh lemon thyme to my batter and put some sprigs on the top to be fancy. I’ll provide the recipe below for those who don’t have self-rising flour.

Ingredients

  • 3 cups (340g) self-rising flour or 3 cups (340g) regular flour + 1 tablespoon + 1.5 teaspoons of baking powder + 1 teaspoon of salt
  • 1 to 4 tablespoons (14g to 50g) sugar, to taste (I used 50 g for my loaf)
  • 4 tablespoons (57g) melted butter (dairy or plant-based) or oil, divided
  • 1 1/2 cups (340g) beer

Method

  • Preheat the oven to 190C/375F. Lightly grease a 9″ x 5″ loaf pan.
  • Mix the flour, sugar, 3 tablespoons of the melted butter, and the beer, stirring until fairly smooth; don’t worry about a scattering of small lumps.
  • Spoon the batter into the prepared pan, add herb decorations, and drizzle with the remaining 1 tablespoon melted butter.
  • Bake the bread for 45 to 50 minutes, until a toothpick inserted about 1/2″ into the top of the loaf comes out clean, or with a few moist crumbs clinging to it.
