Tacos! In my veg box was peaches, fennel, oranges, onions, and tomatoes, so I thought I would try some fun fresh tacos. Grilled smoked tofu, Lauren Toyota’s watermelon peach salsa, and some homemade fennel parsley slaw. This watermelon peach salsa is SO tasty. It is absolutely addictive and worth making loads so you have some for chips and salsa. The shopping list for the salsa is below, and it is basically mix it all in a big bowl:

  • 1 C finely chopped watermelon
  • 1 peach, finely chopped
  • 1/4 C finely chopped red onion
  • 1 vine tomato, finely chopped
  • 2 tbsp finely chopped jalapeño
  • 2 tbsp finely chopped mint leaves
  • 2 tbsp finely chopped basil leaves
  • 2 tbsp finely chopped cilantro leaves
  • 1 lime, juice and zest
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper

Fennel slaw is super easy. Slice up fennel very thin. I use a mandolin for this. Add a tablespoon or so of olive oil, the juice of half a small orange, a bit of lemon juice, salt, pepper, and some chopped parsley. Cover and let sit in the fridge for at least 20 mins.

Assemble the tacos with some mayo (regular or vegan), smoked tofu, some slaw, and some salsa. Done and done!
