simple celeriac soup

I got a small celeriac root in my veg box and decided to use half of it to make myself some pantry soup. This soup is cheap and cheerful on a cold day. And really simple. Cube equal parts of root veg and add equal parts leek to a pot with some water so the veggies are covered by maybe an inch or so. Add a stock cube and boil until everything is soft. Take maybe 1/3-1/2 out (depending how chunky you like your soup) and add whatever milk/cream combination you like (I used oat milk which is stable at high temperatures and I like its flavour and viscosity in soups), a squeeze of lemon, and blend in a blender or stick blender or whatever you have to blend. Pour back into the pot, and add fresh or dried parsley and chives, or whatever fresh or dried herbs you like, and salt and pepper to taste.
