
I had a bit of an adventure in the Peak District and stayed at my good friend Jo’s home where made happy use of her gorgeous garden. One of my lovely kitchen adventures was a rhubarb rose compote, which is yummy on toast or granola or whatever yogurt you like.
I just cut a few of her roses that were nearing the end of their time, and cut some big stalks of rhubarb (about 700g worth). I put the rose petals in bowl with 75g of white sugar (about 2/3-3/4 cup of granulated white sugar) and the cardamom, mixed it around so the petals bruised a bit, and let it sit on the counter for an hour or so while I was puttered around doing other things like reading, drinking tea, and cuddling cats. I put the sugar, rose petals, cardamom and the rhubarb in a baking pan and added some lemon zest and the juice of maybe 1/2 a lemon, and put it all in a 180C oven uncovered for maybe 20 or 30 mins. It comes out smelling so great!
