
My veg box arrived with exciting beets! I’ve discovered candy cane beets are super pretty and surprisingly sweet and not overwhelmingly earthy. I ended up with a bunch of small lemons this week, so this is a raw beet salad with a quick lemon, olive oil, Dijon, dressing (if you struggle with a vinaigrette, I used 2:1 ratio of oil to lemon and a wee bit of dijon to bind it all). If you think I have fancy knife skills, I don’t. I have a mandolin, which is why I have perfect paper-thin beet slices.
