
This got me through a trying week and my veg box was thankfully full of familiar favourites. Boil equal amounts of chopped leeks and potato in a pot with water and a stock cube (I used oxo veg stock). Let boil until everything is soft, about 10-15 mins. Put 1/2 or so into a bowl (or giant jar) and add maybe 1/3 cup of nutritional yeast, maybe 1.5 c of milk (I used oat milk), a big splash of lemon juice, garlic powder, and lemon pepper if you have it. Blend until smooth with a stick blender or whatever blender you want to use, and add it back to the pot. Season to taste, and top with whatever fresh herbs, cheese, sour cream, or whatever you have. I added lemon thyme here. It is fine day of, better the next day.
