For some reason I have so many leeks building up from my veg box past and present. And I’m just not getting through the leeks, given the slow pace I’m cooking them. In any case, I sautéed one measly leek while I tried to sort out what to do for the rest of my dinner. Steamed green beans and boiled potatoes were tossed in the pan with half the sautéed leeks and mixed around with Dijon, roasted dehydrated garlic, lemon, and more oil. The other half of the sautéed leek was tossed with a can of lentils and bag of random mixed grains (quinoa, wheat berries, brown rice) and then tossed with sauce made tahini, lemon, sumac, powdered garlic, salt, and a bit of hot water. I’m a fan of small bags of precooked grains. I realise I can cook grains, but today I didn’t feel like doing it or cleaning another pot. And I admit, I’m impressed with all the exciting grains in this package of perfectly cooked ready to eat grains.
